Everybody gives to exactly one person and receives from exactly one person, and nobody draws their own name. Reveal the pairs one at a time so each person can look away while the others see theirs.

The draw is a single loop through everybody: Anna gives to Bao, Bao gives to Chi, and the last person gives back to Anna. That guarantees one giver and one receiver each, with no self-draws and no pair quietly left out.
Keeping two people apart re-draws until the loop satisfies it, and says so if what you asked for is impossible.
With names hidden, each row shows only the giver until it is tapped, so the laptop can go round the table without anybody seeing more than their own.
Nothing is emailed and nothing is stored on a server: if you close the tab before writing the pairs down, they are gone.
